My husband has long been crushing on a smoker, and I was thrilled when we had the chance to gift him this smoker for his birthday and Father’s Day (days apart!) this year. He was taken with it being a gas smoker for easier temp regulation (Wayfair offers a TON of smoker options so you can choose what is best for you), and he immediately set to work plotting and planning the first foods he would cook in the smoker, and I have to say, he nailed it! Even better? The pulled pork, fresh veggies and baked onion potatoes were EASY and QUICK to prepare–truly a complete smoker meal prepped in under 30 minutes!
Keep in mind when I say “quick”, I mean quick to prepare. Any smoker meal can and will take hours to cook–that’s the name of the game! And there was definitely the need to tend the temperature fluctuation, but after our first go at smoking, it seems a bit like a smoker is the grilling version of a crock pot–and there are many grilling recipes we LOVE! I loved that once we prepared everything, we could look forward to a delicious meal hours later and only had to set the table!
Sold yet on the smoker idea? I know! So let me fill you in on how we made this easy-peasy complete smoker meal…
Complete Smoker Meal Prepped in under 30 Minutes
Our complete smoker meal was simple: pulled pork, fresh veggies and baked onion potatoes.
Pulled Pork:
- Pork butt 6-8lbs. (this is the recommended size for a good reason–ours was larger and it took a really long time to cook!)
- Dry rub
- BBQ sauce(s) for serving
Rub the dry rub over the entire thawed pork butt, wrap in saran wrap, and put in refrigerator the day before smoking. Follow directions of your smoker for cooking time and temps. Once cooked, let rest for one hour, then remove the bones and use forks to shred the pork. (10 minutes prep).
***My husband tends to ambitious when it comes to his BBQ, so he made his own dry rub and BBQ sauces using recipes he found in our cookbooks (yes, we still have those ancient things!), but you can easily purchase at the grocery store or find recipes for both online.
Fresh Veggies
- a selection of fresh vegetables (zucchini, onions, mushrooms, eggplant, peppers and asparagus are some that work well)
- olive oil
- salt and pepper
Wash and chop vegetables to desired size. Toss in a pan with a drizzle of olive oil (we used a 12″x 10″ disposable foil pan for convenience). Season with salt and pepper. Place entire pan in smoker. (10 minutes prep).
Baked Onion Potatoes
- whole potatoes
- yellow onions
- olive oil
- garlic salt
- pepper
- other seasonings as desired
Wash and dry potatoes. Slice potatoes width-wise in 1/4″ increments until you almost reach the skin. Slide thin slices of onion into the slits. Thinly drizzle olive oil over potato and season to taste with garlic salt, pepper and any other desired other seasonings. Double wrap in foil and place in smoker for 4 hours. (10 minutes prep).

OK, your complete meal looks delicious!! And on a side note, my husband wants a smoker and I have put off getting on. But after seeing what you did here with yours, I may have to cave and get one now!! 🙂
