Last year my son’s second-grade class enjoyed a very cool celebration of The Chinese New Year, and this has now lead to both of my children being so taken with this holiday! They’ve been eagerly watching the calendar for its arrival and are actively making plans for how we’ll celebrate this year. While I’m leaving the decorations and activity-planning up to them, I decided to hop in on the fun by creating a yummy kid-friendly appetizer. The result? We all LOVED this recipe for Veggie Rice Tortilla Bites–it is so delicious and easy to whip up. Even better? It’s high in protein and throws in the nutritious benefit of fresh mango. You must give this one a go!
3-Step Chinese New Year Appetizer: Veggie Rice Tortilla Bites:
Ingredients:
- 1 bag of Ling Ling Chinese-Style Vegetable Fried Rice
- 1 cup of frozen shelled edamame
- 1 cup roughly diced fresh mango
- 1 Tbsp. olive oil
- bag of tortilla cups
Directions:
- Heat the olive oil in a pan on high heat and add rice, edamame, and mango until heated through and slightly browned.
- Remove mixture from heat and scoop into tortilla cups
- Serve with a choice of Asian dressings so everyone can enjoy to their liking!
My favorite part of this Chinese New Year recipe (aside from the fact that it’s so easy and quick) is that it’s adaptable. I added the edamame to up the protein quotient and make it more filling. I tossed in the mango for a dose of Vitamin C, as this winter sickness is becoming such a downer. You could skip either of these adds and throw in some of your own ideas (I thought almonds might add a fun crunchy texture??). You could also start with one of Ling Ling’s other fried rice options as your base (Yakitori Chicken, Yakiniku Beef, Thai-Style Chicken or Bibimbap Beef).
