What better way to celebrate Mother’s Day than with a menu item you’ll find yourself coming back to again and again because it’s super easy, and a total hit with kids and adults, alike! Johnsonville has jumped right into my heart with these Fully Cooked Breakfast Sausages. They’re so easy that I was motivated to actually invite my daughter into the kitchen to help me create these fun little sliders. No complicated cooking steps means this mama can be more adventurous in her choice for kitchen help. 😉
Our family loved this served with individual portions of mixed berries, but adding hash browns or a yogurt parfait is another nice way to make it into a complete meal.
Johnsonville Sausage Breakfast Sliders
Serves 4 (2 sliders per person)
8 Johnsonville Ready to Eat Sausage Patties
16 Mini Frozen Pancakes or Mini Frozen Waffles
¾ cup Shredded Cheddar Cheese
6 Eggs
Begin by scrambling the eggs in a bowl. Pour the eggs into a pan coated with cooking spray, over medium low heat. Sprinkle with salt and pepper. Cook omelet-style, flipping once as the eggs begin to set. Sprinkle with shredded cheese, cover and remove from heat.
Prepare sausage and pancakes or waffles according to package directions. If you prefer to use homemade pancakes or waffles, you can easily use your family’s favorite recipe to make them a day ahead; just store in the fridge until ready to use. Pop them in the microwave (pancakes) or toaster (waffles) for a few seconds to get them ready for assembly. After heating spread a very thin layer of butter on each mini pancake or waffle. To fancy this up, spread the heated pancakes or waffles with a mixture of softened butter and a few drops of maple syrup.
Get the kids involved!
Set up your assembly line with the open faced omelet, sausages, and your “bun” of choice. My little was assigned to a station. Bigger kids can use a circular cookie cutter (or if you’re super classy like me, an overturned drinking glass) to punch out omelet circles. Little guys can easily stack up these ingredients into the adorable mini sliders. It’s like my kiddo had been training her whole life for this with all of the castle-building that goes on around here! It was a fantastic way to get her active in the kitchen, and she seemed even more excited to eat breakfast since she helped make it.
The best part of this super-easy recipe? It’s insanely easy to customize (no cheese, no egg, no problem!), and for really picky eaters, the towers can be deconstructed into very familiar breakfast favorites, allowing you to truly make one meal that suits everyone! Toddlers in particular love that their breakfast is all cut into cute little circles that are perfect for munching.
These breakfast sliders are also perfect for entertaining and can be assembled, covered and kept warm. in a very low oven for up to an hour before serving. These are so easy, they’re sure to become a go-to once you’ve tried them! I love them for breakfast on the go, as well. Prepare and wrap in foil to keep warm on your way out the door. Time saver that also helps us avoid the drive-through 🙂
