I have a rice problem. Left to my own devices, I would happily nosh on the fluffy stuff for every meal. I just can’t get enough of rice-y goodness. So when Minute Rice asked me to try out their new Ready to Serve product, there was no arm-twisting involved. Pass that cup over and let’s give this a go!
I was skeptical with the “ready to serve” label. Surely, you would still have to add some water to the cup…nope! You literally pull the film off the cup, pop it as is in the microwave for 1 minute and it’s ready to go. Talk about ideal for a busy mom. It’s so great to be able to offer my kids an healthier alternative to crackers or pretzels as a side dish, but sometimes breaking out my pots and pans just feels like a little too much work. These little cups of rice are so easy to heat up and the perfect portion size for little ones.
It’s cool that it comes in so many varieties too. I wasn’t sure how the Multi-grain Medley or something else slightly fancy would go over with my kids, so I stuck with brown rice. If we ever break out of our tried and true rut, I’d love to try the Spanish Rice or Pilaf Rice varieties. There are a bunch of other choices to pick from as well.
I usually just serve rice plain, but got some encouragement to spice things up from some recipe suggestions that were printed on the inside of the packaging. “Stir It In” recipe ideas can also be found online. My daughter is currently going through an I-dramatically-push-myself-away-from-the-table-and-shake-my-head-no-whenever-someone-tries-to-feed-me-any-typical-breakfast-foods stage, but she loves rice. I decided to try Minute Rice’s “Mock Apple Pie” recipe one morning, as it seemed sort of breakfast-y.
I sauteed some chopped apples in a little butter, mixed them in with the brown rice and added a small dash of cinnamon and sugar. No surprise, she loved it! And she started off her day with a nice dose of whole grains and fruit. I think I’m sold. We’ve finally found a non-breakfast breakfast food that makes us all happy.
I’m also looking forward to trying the “Peanut Butter and Honey Rice” (add peanut butter, honey, and top with granola) and the “Margarita Rice” (add mozzarella cheese, chopped tomatoes, basil, and balsamic vinegar). There are other great “Stir It In” ideas too, great ways to take rice from just a side dish to an easy meal.
